Hi Anthony, and welcome to the site.
You're right, your dogs will have to adjust to the heat and humidity of Florida, so make sure they have plenty of overhead shelter outdoors and areas where they can get up off the ground. Refreshing their water supply throughout the day will be crucial, so you may want to look into an automatic watering system. If you plan to keep the dogs outside a lot of the time, you may want to invest in one of those misting fans. They really cool the temperature in the area they cover.
As for shaving your dogs, I'd wait to see how they handle the Florida weather. Although a thick coat keeps a dog warm in cold temps, it also can protect a dog from the hot sun. If you shave the dogs down, they may be susceptible to sun burns.
You might also want to try looking up Bernese kennels in Florida (or a nearby southern state) to ask how they deal with the heat for their dogs. This would probably be the best info you could get coming straight from a breeder.

Welcome to the site. I can only speak in general terms because each dog is unique, but many larger breeds do not come into heat for the first time until they are 18 to 24 months old. :)
